"Power" salad

It seems that about once a week - usually on Sunday evenings, for some reason - we are not in the mood to cook much or to eat much. That's when a hearty salad, with carbs, protein, and fat in it, sounds perfect.

Unless you have left-overs waiting to be chopped up, making the salad interesting might require some low-maintenance cooking: boiling potatoes or cooking brown rice or hard-boiling eggs or sautéing onions. Still, easy does it. Usually these "power" salads consist of some of the following:

- mix of salad greens
- 4-6 green onions, chopped
- 2-3 tomatoes, chopped
- 1-2 avocados, chopped
- 2-4 hard-boiled eggs, chopped
- 1-2 onions, sautéed
- 4-8 cloves of garlic, sauteéd
- pickles, chopped
- boiled potatoes, chopped
- canned tuna or salmon
- cooked rice
- mayonaise or other dressing
- olive oil
- pepper
- salt
