This was an experiment inspired by an idea from a colleague. We grilled slices of eggplant and zucchini on a grill pan and wrapped the latter into the former with a generous slice of mozarella in between. The outcome was tasty, but too fragile -- even with toothpicks holding the rolls together -- to serve at a party.
