Pea Soup

To empty the freezer before a move, we had to find use for two bags of frozen peas. This recipe from Orangette blog did the trick:

Sauté oil and garlic in a saucepan over medium-low heat, add scallions before garlic browns. Stir, add frozen peas, stir, add broth. Cover and simmer until peas are tender, about 5 to 10 minutes. Cool, purée in a blender or food processor until the mixture is very smooth. Serve immediately.

- 1 Tbs olive oil
- 1 clove garlic, minced
- 2 scallions, sliced
- 4 cups frozen peas
- 3 cups hot vegetable broth
