After accidentally buying too many eggs we decided to use them up quickly by preparing "deviled eggs." These are hard-boiled egg-white halves topped by a filling based on mayonnaise and egg yolks. You naturally start by boiling the eggs (here's a method: cover eggs by 2"/5cm of water, bring to a boil, shut off heat, and let rest for 10 min), cutting them in half, and removing the dry yolks into a bowl. Then you add other ingredients into the bowl, mix and mash the contents into a paste, and fill the egg halves, optionally topping with a spice or with chopped greens. The following two filling recipes, borrowed from deviledeggs.com are both based on 6 eggs:
"Classic" filling
- 1/4 cup mayo
- 1/2 tsp dry ground mustard
- 1/2 tsp white vinegar
- 1/8 tsp salt
- 1/4 tsp ground black pepper
- Paprika for sprinkling on top
"Crunchy" filling
- 3 Tbsp mayo
- 3 Tbsp chopped vegetables (e.g., red pepper, scallions, celery)
- 1 tsp yellow mustard
- 1/4 tsp salt
- 1/4 tsp ground black pepper
"Classic" filling
- 1/4 cup mayo
