Eating artichoke leaves is more fun when a variety of dips is available. In addition to the "classic" melted butter, we tried -- and liked -- the following two dips from artichokes.org, which should be enough to go with four large artichokes.
Curry Mayonnaise
Melt butter in a small pan and add curry powder. Bubble gently for a couple minutes over low heat to eliminate bitterness from the curry powder. Cool and add to mayo.
- 1 cup mayo
- 2 tsp curry powder
- 2 tsp butter
Creamy Thai
- 1/4 cup peanut butter
- 1/4 cup brown sugar
- 2 Tbsp cider vinegar
- 2 Tbsp soy sauce
- 1 tsp sesame oil
- 1/8 tsp ground ginger
Next time we should try their "honey mustard" tip.
