To give that fish you are grilling (or baking) a lucious shiny glaze, try this uncomplicated concoction from Cooks Illustrated: Slowly bring to a simmer in a small saucepan the mixture of soy sauce and honey and let it thicken over the course of 3-4 minutes. Remove from the heat and whisk in the mustard. Can be used as a marinade or a glaze, to be applied with a brush during cooking. (I did both when I baked my salmon.)

- 1/4 cup honey
- 3 Tbsp Dijon mustard
Next time, maybe I will try their recipe based on just maple syrup and soy sauce. For the glaze, the ratio between the syrup and the soy sauce is 2:1, while for the marinade, they use them 1:1. They also thicken the glaze by heating it, just as described above.
