
From my friends in the Pacific Northwest comes this wonderful variation on the classic coleslaw. Without a cabbage it's not really a
cole slaw -- which apparently stems from "cabbage salad" in Dutch -- but it sure tastes similar to it. But not the same. (Those afraid of fennel/anise/licorice flavor need not worry: it is barely perceptable in the final product.) Grate the two roots, squeeze half a lemon onto them, and mix in mayo to the desired consistency.
- 1 celery root
- 1 fennel root
- 1/2 lemon
- mayonaise
