Armed with a pack of Trader Joe's soba noodles, I followed the recipe from the unabashedly vegan Postpunkkitchen down to the letter, except for vegetable substitutions (mushrooms and scallions instead of peppers).
As they said... Prepare noodles according to the package and toss them in the sauce. (This is where I would reheat the noodles next time. I would also try to make the sauce thicker somehow. Oh, and heat the sauce, too!) While the cooking the noodles, steam or boil some veg, like broccoli, peppers, mushrooms... whatever you like. Serve vegetables on top of the noodle "nest" and, for dramatic effect, drip sauce all around the pile and top off with parsley and sesame seeds.
Sauce:
- 1/3 cup soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp peanut butter
- 1 tsp ginger, grated
- 1 close garlic, minced
