
Frankly, both of these recipes require much improvement.
The asparagus was undercooked and yet dry. I baked it at around 400F for 15 minutes, with butter underneath and grated Romano cheese on top. Perhaps, lowering the temperature would help?

The stew was well done, but it was also bland, relying on the salt shaker for help. In hindsight this makes sense, since I essentially worked around a "bacalao" recipe but omitted the extremely salty cod fish!
- 0.5 cup olive oil
- 4-8 garlic cloves
- 12 pearl onions
- a 28-oz (large) can of tomatoes
- 12 small potatoes, pre-boiled
- 3 bell peppers

I started with chopped garlic, discarding it after it flavored the oil. Then I sauteed the onions for a while. Eventually, everything else went in, simmering for over 20 minutes. Half a cup of red wine won't hurt, either.
