I am learning how to sear tuna by trial and error. I can report that 3 minutes on each side is too much (on high heat) if you want the inside to be pink. Go for 2 or less.
The sauce came out well, although it could be a tad thicker. (Add starch next time?) Heat the following ingredients in a small saucepan, taking care not to boil the stuff:
- 0.5 cup butter
- 3 tbps soy sauce
- 2 tbps lemon juice
- 1 tbps wasabi paste
- a few sliced green onions
The risotto was standard (saute onions and mushrooms in oil, add rice and coat it, then keep adding broth periodically) except... I used jasmine rice! Admittedly, I was worried. Yes, I know I am supposed to use Arborio or, even better, Vialone Nano or Carnaroli, but... I did not have them. And it came out fine, in my suitably humble opinion.
