According to the venerable Gumbo Pages, this dish is "traditionally served on Mondays" in New Orleans. Today being Monday (particularly the day that the Superdome reopens after the hurricane) and my pantry being stocked with beans of all sorts, I just had to cook this. As an impatient "yankee," I could not boil the beans for an hour and then simmer for three hours, so I am sure the end result was not as good as it could be, but it was good nevertheless. Here's how I made it:
- 2 cans red kidney beans
- 1 large onion, chopped
- 2 bell peppers, chopped
- 6 ribs celery, chopped
- a bunch of minced garlic
- 2 tbps veg oil
- 1 tsp. thyme
- 2 bay leaves
- some Tabasco
- some Worcestershire sauce
- some black pepper
Boiled the beans for 30 minutes, drained. Meanwhile, sauteed veg. Added veg, oil, and spices to the beans, added water just enough to cover everything, and simmered for about an hour. Served on top of rice.
